Hi Ellen, I had a question on serving salads for a wedding picnic of 400. We are serving chicken breasts and also barbeque but if we have 3 salads, pasta salad, potato salad and green tossed salad, how much do I need of each? We are also having a fruit display with assorted cut fruits. |

I would do at least 120 pounds potatoes, 24 pounds pasta, and 4 times green salad for 100 on the plan for 100 list. |
