Hi!
I am catering a 60th wedding anniversary next month and need help with quantities.
The family is ordering a 'méchoui' (a whole animal being roasted over fire) and they will have baked potatoes for everyone.

They have asked me to make the salads:

- pesto-pasta
- green salad
- spinach-strawberry-feta
- mediterranean (peppers, zucchini, olives, artichoke hearts, fresh basil mushrooms)
- fruit (they will have other dessert but want to have a healthy alternative)

How much should I prepare of the salads?

Take into consideration, I am also preparing veggie platters to serve with this whole spread...

Gaby, if this is a paid job, please make a donation to help support the site.

- pesto-pasta- 4 pounds dry pasta
- green salad-use romaine, 4 pounds
- spinach-strawberry-feta- 4 pounds spinach
- mediterranean (peppers, zucchini, olives, artichoke hearts, fresh basil mushrooms)-about1 to 1 1/2 gallon
- fruit (they will have other dessert but want to have a healthy alternative)- use fruit tray page, make for 2/3 of 100

It is a paid job but part of the money is going for the food and the rest is going to support the Cancer Research Society (in Canada for which I am raising 8500$!). I'm not getting paid for this one! I will gladly donate if I get another paid catering gig.
