Can I make your hashbrown casserole for a 100 and freeze it the week before the wedding I want to put it in my 18 quart roasting pans and that way I just slide them into the cookers the afternoon of the wedding and let them cook slowly as it will be a busy day. Dinner will be served at 8 pm |

No, because the hash browns are thawed, they cannot be safely refrozen until they have been cooked, and this does not reheat very well. I would thaw in fridge, assemble and refrigerate day before, then bake day of. |
