Marilyn,
I use the following for small batches. In a medium saucepan, add the figs and sugar and bring to a simmer. Add the jell-o and bring to a slow boil and boil for 3 minutes. Pour into hot prepared jars, rings & lids and seal to finger tight. Process in a boiling water bath for 10 minutes. Do not adjust the rings after the water bath. This makes a rather stiff preserve. I have used the same with only 3 ounces of jell-o and it makes a more spreadable preserve. Harry T. |
