Hi Ellen! My fiancee and I are planning on providing our food for our wedding reception in September. We are inviting 130 people and are quite sure what the actual final count will be until we send and receive our RSVP card back. We are planning on smoking brisket, having shaved ham, and the sides include baked beans, potato salad, cole slaw, rolls, and pickles. We are also going to have tea, lemonade, 2 liter sodas, and bottled water. What would you suggest on the amount we would need for our reception? THANKS! |

Whatever you get back on RSVP, add at least 10%.
smoking brisket, you need 1 pound ready to eat per 3. Do a test brisket, weigh before and after, to see how much your smoker shrinks it. They vary. Consider one or two classic relish trays and a fruit tray for 100 along with some cheese and crackers as a nibble table while the photos get taken after the ceremony. It give some wiggle room for the set up and helps with the kids.
