Help. I am purchasing both potato salad and cole slaw for a picnic for 85 people, mixed ages from very young to elderly. How many pounds of each do I buy? The place I'm buying only sells by the pound. I need help ASAP. Thanks so much. |

try buying a pound and divide it into serving sizes. or try to boil 2 large idaho potatoes (approx 1 lb) if you cant get a sample from the caterer... if one pound makes 5 servings, then purchase about 17 pounds of the salad. |

Just answered this question in another thread: 1 pound of potatoes (3 medium) makes about 2 cups of cooked cubed potatoes, and most cold potato salad recipes are 2/3 potatoes, 1/3 everything else. So 1 pound of potatoes makes up to 3 cups of salad, and 1 gallon = 16 cups. So you need around 6 pounds of potatoes to get a gallon of salad. Hot potato salads have less things added, so you might want to allow 7-8 pounds per gallon if you are making hot. |
