Well, a 300 person wedding shower is a new one on me...

First of all this requires about 6-8 people in the kitchen, plus an experienced manager and about 15 servers to set up, serve and clean up. How are you staffing?

Second, it requires a commercial size kitchen to prep, safely store, and cook, and at least 4 to 6 serving lines. What are your arrangements?

Grilling for this many people (burgers and dogs) is a pro-level task, and comparatively expensive, meat-wise. What about stepping up the sausage and peppers, meat balls and adding ham to make a good hot and cold sandwich bar? Good rolls and bread, sandwich condiments.

This is how I would scope the menu:

Salad department
Potato salad
Macaroni salad
Toss salad- skip, do classic relish trays
Cole slaw

Hot sides
Baked potatoes
Ziti
Mac & cheese
Possible to do just a baked potato bar- see the potato bar page

Entrees
As discussed above

Desserts- do dessert buffet, see the dessert planning page.

Beverages, see the beverage planning page

Appies
Apps:
Pepp cheese crackers - do cheese assortment, no more than 1/4 pepperjack, 1 pound per 10 cheese, 6-8 pounds crackers
Veggies & dip
Fruit salad
