Hi Ellen, I am hoping you can help me with my final numbers before I head to the store. I am helping my mother in law cook a mex party for 45-50. (I did ask for advice before in one of the forums). We are making Chicken and skirt steak fajitas, beef tacos and chicken enchiladas. The family has a lot of big eaters but not all of them are. I am ordering (7 lbs skirt steak, 6 lbs chicken for fajitas), 10 lbs burger for tacos, and I know what I need for the enchiladas. Do my numbers seem okay? Will 10 lbs of peppers be enough, and 5 lbs of onions for the fajitas? Will 3+ lbs (a mixture of) Colby Jack and cheddar cheese be enough? We also have tons of chips, queso and salsa , 2 types of corn muffins, plus mex rice and refried beans and many desserts. I really appreciate any help you can give me. Thanks,Lilly |

Oh I forgot, tomatoes and lettuce for the tacos. Are 10 heads of lettuce and 10 to 12.5 lbs of tomotoes enough? |

Do the lettuce by weight- 1 pound per 4-5. Tomatoes the same. The rest looks fine, except you will run out of skirt steak and have some burger left over. Cheese is OK, not much left. Do not forget plenty of sour cream- about 4 pounds. |
