Basically, you need 3/4 to 1 cup fruit per person, of which about 1/4 is cranberry. The cranberry can be frozen or fresh.

For each 6 to 8 cups of fruit, you sprinkle on 1/2 to 1 cup sugar.

If you use apples, a little cinnamon is good, if you use pears, try nutmeg.

For each 6-8 cups of fruit you need a streusel type topping:

1/2 cup all-purpose flour
1/2 cup brown sugar
1 teaspoon cinnamon
1/3 cup butter or margarine
OPTIONAL 3/4 cup honey almonds

This would be processed in a food processor if the nuts are included, otherwise, you can do it by hand.

Preheat oven to 375ºF. Lightly butter the pans.
For each 18-20 cups fruit, you need 2 9x13 pans.

Put the fruit in, sprinkle with the sugar, put on the topping.

Bake 40-50 minutes (depends on the thickness of the layer) or until fruit is bubbly and pears are tender. Cool slightly. Serve warm with vanilla ice cream (5 gallons per 100).
