Basically, you need 3/4 to 1 cup fruit per person, of which about 1/4 is cranberry. The cranberry can be frozen or fresh. For each 6 to 8 cups of fruit, you sprinkle on 1/2 to 1 cup sugar. If you use apples, a little cinnamon is good, if you use pears, try nutmeg. For each 6-8 cups of fruit you need a streusel type topping:
1/2 cup all-purpose flour This would be processed in a food processor if the nuts are included, otherwise, you can do it by hand.
Preheat oven to 375ºF. Lightly butter the pans. Put the fruit in, sprinkle with the sugar, put on the topping. Bake 40-50 minutes (depends on the thickness of the layer) or until fruit is bubbly and pears are tender. Cool slightly. Serve warm with vanilla ice cream (5 gallons per 100). |
