60lbs yukon gold mashed potatoes- I routinely do 85 minimum for this size crowd.
30lbs green beans- 45
40lbs fruit salad-62-65. Look at the fruit tray page. Trays are prettier, easier to serve and eat, and any leftovers are more usable.
25lbs Caesar salad- OK
20 lbs tortellini salad-45-50

we will also have a cocktail hour before hand and be serving
15 lbs shrimp with cocktail sauce (we will have 2 oz portion cups)- everyone will take one, some will take 2, either have 30 pounds or skip it

10 lbs cheese & crackers- at least 20 pounds, and 30 would not be way too much. Some can be logs and spreads. 6 pounds crackers per 100
10lbs of jalapeno bites-depends on the crowd and the size of the poppers, but one per person would not be too much
