I allow 4 to 4 1/2 gallons of potato salad per 100, this weighs about 40 pounds- depends on the recipe. I allow 8 pounds dry beans per 100 for a side dish (about 3 gallons, cooked) such as baked eans, up to 12 for an entree type dish such as red beans. |
