Just started a new job as kitchen hostess at church. My biggest fear is not having enough food! Serving 35 for a funeral lunch we are having salads to include chicken salad, pasta salad, green salad, pea salad, fruit salad, black eyed pea salad and jello salad. How much is needed of each. Will have some sliced ham for any men who don't want chicken salad. Thanks |

chicken salad, 2 gallons pasta salad, 2-3 pounds dry pasta, 2 is usually enough green salad, see the plan for 100 table, do 1/4, people will not eat as much because of the other salads pea salad, 1/3 cup per person black eyed pea salad, 1/4 cup per person fruit salad, consider a fruit tray instead, prettier, keeps better and the leftovers are more usable. See fruit tray page, do 1/3 the deluxe tray for 100 jello salad, 5 small packets of jello plus additions |
