Wedding Reception

I could sure use some help! I am tentatively planning for 300 at my wedding reception. I am thinking of purchasing the following:

Boneless Ham (75 lb. boneless)
Rolls (600)
Cheeseball (12 lb.)
Crackers (18 lb.)
Potato Chips (18 lb.)
Dip (6 qt.)
Mixed Nuts (9 lb.)
Potato Salad (36 lb.)
Pasta Salad (36 lb.)
Deviled Eggs (600 halves)
Sweet Pickles (6 qt.)
Olives (64 oz.)

We would also have cake, mints, punch, probably coffee, and a candy buffet bar.

I was wondering how this menu sounds? Enough, not enough? Thanks so much for any help you can offer!

Kev's gal, not nearly enough- if this is at a mealtime, I would do:

Boneless Ham (75 lb. boneless) 100 pounds
Rolls (600) OK get good ones!
Need sandwich condiments for 300, see the sandwich event page
Cheeseball (12 lb.)- Need 1 pound cheese or cheese balls/logs/spread per each 8- people
Crackers (18 lb.)- do 20
Potato Chips (18 lb.)- need 30
Dip (6 qt.)- 5 gallons
Mixed Nuts (9 lb.)-18 pounds
Potato Salad (36 lb.)- need 10-12 gallons- about 80 pounds
Pasta Salad (36 lb.)- same as potato salad- 18 pounds dry pasta, if you make it yourself- it's easy
Deviled Eggs (600 halves)-OK
Sweet Pickles (6 qt.)-3 gallons
Olives (64 oz.)-6 quarts

If not at a meal time, you could reduce everything about 1/4

Natoya, 8 pounds dry peas per 100. The rice depends on the way you are serving, if it is a light side dish, or one of several starchy dishes, 8 pounds per 100; if it is a main dish and you need a plateful for each person, 12-15 pounds per 100.
