Hi--I am having a luau with about 40 people. I have already cooked my kahula pig and froze. now I want to make Kahuna Kielbasa and Waikiki Meatballs. Both have pineapple in them I am trying to make ahead and freeze but not sure if I can freeze these dishes with the pineapple. Thanks for your help |

I don't freeze pineapple, and if you choose to do so, I suggest you use canned pineapple, as it has been cooked sufficiently to deactivate all the enzymes. The kielbasa will probably have a better texture if done 1-2 days before and refrigerated. |
