hi maybe u can help me i was just wondering i am making macaroni and cheese and i need two trays how many boxes of macaroni will i need per tray?? i am also making zatarain's jambalaya rice and i will also need two trays so how many boxes will i need per tray?? thank u sooo much... crystal :) |

Crystal, all the packaged food material tells how much the box makes- 6 1 cup servings is 6 cups- I don't know how big your trays are, they come in different depths, hold 7 to 24 quarts... 1 pound mac plus 1 quart sauce fills a 9x13 pan and serves about 10. I need the whole menu to do a mixed estimate. |

We are doing a back to school theme with our senior adults and the menu is mac and cheese, chicken fingers, salad and dessert (like a school cafeteria). I am making the mac and cheese. I want it to be moist (not dry)and cheesy. I need a recipe including the correct size pans to feed 60. Any help/advice you can give me will be much appreciated. |

Diana, here are the basic proportions: 1 pound of pasta plus 1 pound of cheeses, plus 5 cups of sauce per 10-12 older people (8 younger). Add-ins to taste. You make your basic cream sauce, stir in the cheese, mix with the pasta. I would make 6 pounds of pasta, not counting the servers/staff. |

Hi Ellen. I'm making mac and cheese for 200. Using a basic recipe of 1lb macaroni, 1/2c flour and butter, 5cups of milk and 4 c of cheese. I'm using 1/2 size aluminum pans sized 10 3/8 x 12 7/8 x 2 1/2 deep. How many recipes fill this pan and how many pans will I need? Also, can I prepare in the morning and bake closer to the time of the party. Thanks for your advice. |
