would like to make nice wine sauce not tomato based pork loin will be stuffed with mushroom duxelle possibly spinach and some sort of cheese . thanks!! |

See the Marsala sauce for the chicken and use a dry cider instead of white wine to cut the marsala. On the same page as the dijon wedding chicken. |
