Mediterannean Meal- baba ganoush?

08/18/12 		Is it ok to keep asking questions? Feeding 70-130 people all week...

For a meal consisting of
baba ganoush (25# eggplant, 3 cups tahini, 4 cups oil)
cannelini salad with kale (24 cups + 24 bunches)
green salad (5# + 1 cukes & tomatoes)
crackers/pita (no idea here?)

for 115 people
look ok?

BREAD: 8#? crax
or
115#? bread or pita

08/18/12 		Mielle, you need to deal with this by email at the contact address at the bottom of the page, and you need to send the whole menu, with the number served specified at each meal. From what you have posted, you are low on proteins and amounts. I don't want to try to do this one meal at a time.

08/18/12 		To make baba ganouah as a dip for 100, I would use the
25 pounds eggplant, roasted,

1 quart lemon juice
1 quart tahini
1 cup of oil
1 cup raw garlic, crushed
salt
cumin

garnishes
1 cup chopped parsley
1 cup olive oil
1 quart kalamata olives
3-4 tablespoons ground sumac
