Wedding Reception for 60

Hello,
I am planning a wedding reception for 60 next September. I was wondering if I am heading in the right track.

whole hog (ordered/ various sauces)
mac and cheese 3 roaster pan sizes
potato salad 4.5 lbs
pasta salad 3.5 lbs
stewed squash and onions 3 lbs
baked beans 3 lbs
sweet potato casserole 3 lbs
broccoli casserole 3 lbs
cole slaw 3.5 lbs
tossed salad 4 lbs (with various toppings)
Rolls 120
Hushpuppies 5 pp

We will be serving 6 gallons of tea, water, beer, and wine.

Desert will be a cupcake tower wit 3 pp.

Appetizers fruit and cheese, spinich artichoke dip with crusty bread, brownies.

Menu is fine, amounts need tweaking.

whole hog (ordered/ various sauces)- 60 pounds whole, head off
mac and cheese 3 roaster pan sizes- OK

stewed squash and onions 3 lbs- 15 pounds
baked beans 3 lbs- 1 1/2 gallons
sweet potato casserole 3 lbs- 1 1/2 gallons
broccoli casserole 3 lbs- 1 1/2 gallons

potato salad 4.5 lbs- I usually do 4 gallons for 100. Even with your other dishes, you need at least 2- 16-18 pounds
pasta salad 3.5 lbs- start with 2 pounds dry pasta

cole slaw 3.5 lbs- I usually do 12+ pounds for this size group
tossed salad 4 lbs (with various toppings)

Rolls 120- 80 OK with hush puppies
Hushpuppies 5 pp
butter-2 to 3 pounds

Have at least 1/3 of the tea unsweetened.
