Hi Ellen Its our 20th wedding anniversary next weekend and we are having 80 adults for a buffet lunch. I am planning starters of blini with roe, avocado dip and nachos and tomato/mozarella skewers with pesto. for main course, I am going to poach a salmon and make coronation chicken. I am planning on buying 14 (4 1/2 lb) chickens and a 15lb salmon - if I can get one that big. I will have sides of tomatoes, cucumber, couscous salad and rice with almonds. Is this OK? I am buying in puddings from a local baker. regards Alison |

Nice party... good amounts. Consider doing 2 8-9 pound salmons arranged head to tail like the pisces sign from astrology- very pretty and appropriate for an anniversary. Have some good bread or rolls. If you chill the salmon, have some cream cheese something and capers on the table. |
