Hi Ellen, I am cooking a lunch from 1-3pm for 30 people for my daughter's baptism. I had planned to do: 4 Appetizers - deviled eggs, popcorn, 2 types of crostini and a roasted vegetable skewer 3 Salads - 1 pasta, 1 vegetable medley and one mixed green 2 Types of DIY Sandwiches - 1 roasted turkey and 1 chicken salad on mini slider rolls with condiments Possibly 1 Dessert First of all, does this sound like enough options? Secondly, and more importantly, I am unsure of the amounts to purchase for the sandwich meats. I was planning on purchasing a whole turkey, brining and roasting it, as well as whole chickens to poach for the salad. Can you please help me to decide how much to buy? It's giving me anxiety as I am afraid I will not have enough! THANK YOU IN ADVANCE!!!! |

Sorry, I had a 30 person lunch with sliders and a 40 person lunch with sliders, same menu, come up the same day, and I thought it was the same thing! I would do 25 roast beef and 15 of each of the others, maybe 20 of the turkey... |
