Making chicken salad for 180 with canned chicken. We willbe adding celery and mayo. How much Canned chicken will I need? We will be serving it as a sandwich for brunch and will be cutting the 2 slices of bread into 4 triangle sandwiches. One quarter per person. |

Joy, usually people eat 2 of this particular one. For this, you need 3 1/2 to 4 gallons chicken salad, which is approx 2 gallons chicken, 1 1/2 gallons mayo, 1 gallon very finely diced celery, 1/2 to 1 gallon very finely chopped parsley. |
