We have decided to self-cater our wedding, with the help of family! I am hoping you could guide me into the right direction for how muc ingredients I will need to make our menu a success for 100-125 guests. Here is our menu:

Mexican Cornbread Muffins (2 per person)
Jiffy Cornbread Mix
Cream Style Corn
Hamburger meat
diced onions
diced jalepenos
Shreded cheese

Black-Eyed Peas (1/2 cup serving per person)

Fresh Cut Fries

If you couldn't tell, we live in Texas and we're going for a simple southern menu to match our wedding!

Haley, I am a little puzzled about the menu. What is it you plan to do with the hamburger? I could see a tamale pie, but that doesn't go with the 2 muffins per person.. Write back.

French fries are very difficult for a large crowd. Potato wedges, seasoned and done in the oven, are a possibility.
