Turkey dinner for 30

Could you give me some hints on how I can get the turkey carved and gravy made before guests arrive. I would love to have the "mess" cleaned up an hour or so ahead. Have already planned on serving the gravy in a crockpot.
Also, do you have ideas on how I can cook carrots the day before and reheat and still taste fresh and crunchy!

Carrots won't be crunchy if reheated. That is one reason green bean or broccoli casseroles are so common.
