Feeding 550 help please

I am catering for 550 people and am requesting help for two of the dishes I am serving. I do not know how much of each item to purchase for the following:

Veggie Tray w/ranch: Cauliflower, Cherry Tomatoe, Carrots, Broccoli and Celery.

Fruit Tray: Cantaloupe, Honeydew Melon, Watermelon, Strawberries, Grapes

I am also making a casserole expected to serve 150 people. It has the following ingredients:

White Rice, Red Kidney Beans, Cajun Seasoning, Corn, Green Peppers, Celery and Onions.

Please help with the quantities for this dish also.

Use the veggie tray page and the fruit tray page, and make for 500- there is some reduction as you get into these very large numbers.

The casserole depends on whether it is one of several side dishes or starches. You would do 8 pounds dry of each, rice and beans, 20 pounds assorted veggies per 100 for a nice side dish.

The casserole is the main dish for the 150 vegetarians. I am using canned kidney beans, not dry. Would your numbers still be accurate?

This is what I calculated for my Veggie Tray:
20 lbs. Cauliflower
20 lbs. Carrot
10 lbs. Broccoli
10 lbs. Celery
20 quarts Cherry Tomatoe

This is what I calculated for my Fruit tray
20 Cantaloupe
10 HoneyDew
2 (20 lb.) Watermelons
25 lbs. Strawberries
15 lbs. Grapes

Do these sound about right?

One pound dried beans is 3-4 regular cans canned, or 2/3 of a #10 can. If it will be served to just the vegetarians, you can do 18 pounds dry rice and 8 #10 cans beans. DO rinse the canned liquid off the beans. If it will be out self serve, many people will help themselves.

You will run out of both fruits and veggies. You need at least 1 pound per 8-10 people for the veggies, 1 pound per 5-6 people for the fruits. See the veggie tray page and especially the fruit tray page for help on translating from whole items to your appetizer tray.
