can you please check my figures on this?
going to serve as a taco bar/self serve buffet: ground beef/pre-prepared fajita chicken soft shell tacos, with chips (instead of hard shells), as well as chips/salsa for cocktail hour. sides will be beans/mexican rice.

soft tortillas - 400 (2/person, optional chips for nachos instead of hard shell option)

chips=???! (substitute for hard shell and need for cocktail hour/available all night)

beef - 50 lbs raw
chicken - 40 lbs cooked
shredded cheese - 13 lbs
lettuce=?
olives = one #10 can
pico - 2 gallons(? ingredients??)
sour cream - 10-13 lbs?
jalepenos/banana peppers - 1 #10 can each
salsa - 2 gallons for taco bar, plus (???) for
queso cheese (available for cocktail hour)=???
rest of evening/cocktail hour (we also plan to season the beef with the salsa)
guacamole - 2 gallons(?)
refried beans - 20 lbs
black/pinto beans - ?? not sure on bean/refried bean ratio??
mexican rice = ??

I know we are insane for attempting this...thank you in advance for your help! :)

Ticia, did you not look at the taco bar page? This is actually a sensible meal for this large a group, but I would tweak some amounts.

beef - 50 lbs raw 40 enough
chicken - 40 lbs cooked 30 enough
shredded cheese - 13 lbs some left
lettuce=?25 pounds shredded
olives = one #10 can- consider 2
pico - 2 gallons- may need 3
sour cream - 10-13 lbs? 10 OK
jalapenos/banana peppers - 1 #10 can each OK
salsa - 2 gallons for taco bar, get 3
queso cheese (available for cocktail hour)= this will be used to make nachos if you don't also have nacho cheese. 1 pound Velveeta style cheese food needs 1 can Rotel tomatoes with diced peppers. Very nice with 4 ounces of chorizo sizzled up and added in, or corn
1 pound with add ins serves 6
rest of evening/cocktail hour (we also plan to season the beef with the salsa)
Season the meat with the home made taco seasoning from this site, not salsa, for cooking
guacamole - 2 gallons(?) either skip or get about 4- people love this stuff
refried beans - 20 lbs
black/pinto beans - do 8 pounds dry
mexican rice = about 18 pounds dry

Do fruit trays. Have about 6 pounds of slivered onions that have been soaked in cold sugar water. 12-15 pounds of chopped tomatoes would be a fine addition.

Have shaker bottles of Tabasco and other hot sauces.
