I was wondering what types of Soybeans should I use to make tofu. I am starting to grow my own soybeans. Do they need to be dryed or can they be fresh. I was thinking on growing Usite. Is this a good brand. Thanks |

The University of Illinois, a great agricultural school has a deprtment devoted to soy and its growth. They are who you need to talk to. Here is a link: http://web.aces.uiuc.edu/intsoy/expert.html The only specific variety I know to recommend for soymilk is called "Laura". It is delicious and mild. |

If you mean stinky tofu, I don't think you can make it at home- or would want to. There is an article about it on this site. |
