cornbread stuffing

11/07/12 		I am cooking a simple recipe for 160 consumers. How many pans of cornbread stuffing would I need and how much do I need per ingrediants? Here are the ingrediants: box corn bread mix,package of pepperage farms cornbread stuffing (already cubed) chicken stock, celery, onions, butter and sage.

6 ounces per person ready to serve.

Per 80 people, approximately
3 pounds onions
3 pounds celery
about 5 quarts broth
2 cups eggs
2 gallons dry cubes (maybe 5 pounds?)
4 9x13 pans corn bread
about 1/3 cup poultry seasoning (you would reduce because the Pepp Farm is already seasoned.)

You can add in up to 6 pounds of other stuff, nuts, fruit, etc.
