I am asked to make 15-18 10# prime ribs for a wedding reception. My plans are to sear them using infrared for 20 minutes and then finish them in ovens. How do I deal with them sitting for a few hours between the oven time and the carving time? any suggestions or tips on handling the meats for this many people?? |

Roy, post to cheftalk.com and cheftochef.com There are specialty ovens/roasters for this amount of meat and considering you are looking at $1000 worth of meat, take care. |
