Dona, is this all on the menu for one party? Is it buffet with seconds allowed? Do you have the 50 person staff of cooks and servers it will take to set up, serve, and clean up this size party? More info, please. |

its a buffet but every one is served once. i do have the staff to clean and serve and to prepare. what am not sure about is the quantity of 8 quart pans i need for each dish. The menu has changed Veg Lasagna Fried rice Garden salad roasted potato wedges BBQ Chicken Creole fish brownies |

A 2 inch full size steam table pan actually holds closer to 7 quarts than 8. 56 1/2 cups...
BBQ Chicken-1 piece per person
Fried rice-6 pounds (two pans, approx.) dry rice per 100 Garden salad- see plan for 100, make for 450 brownies- 2 per person- see the dessert planning page. Consider a dessert buffet instead. If this is a paid gig, consider a donation to support this site. |
