Hi, there is a guide for chicken salad per 100 on the plan for 100 page, with the different amounts for receptions, plates and sandwiches discussed in detail. This is somewhat affected by the time of day, length of event and the rest of the menu. If it is over a meal time, you need meal time amounts; if mid afternoon reception is fine.. |
