Cooking for a birthday party for 137 people. Meats are brisket and country style ribs. Sides are baked beans, oorn, coleslaw and pasta salad. Please help me figure out how much of each I need |

You can count this as 1 1/3 of 100 for table estimates, for the sides. For the meat, at least 1/2 pound ribs per person and 2 pounds raw brisket for 5 persons. Brisket is a fat, coarse meat the shrinks almost by half when cooked- and people like it. Have someone serve the first round of meat, to make sure it goes around. You might consider adding 20 pounds of leg quarters as cheap insurance. If trhis is a paid gig, consider a donation to support the site. |
