How much corned beef and cabbage do I need for 300 people? And can I cook this in a portable roaster oven? At what temperature and how long? |

Cindy, it will take at least 6 roasters to heat this much food, and if you put 2 on one circuit, it will blow the circuit. See the St. Patrick's Day thread and the corned beef thread for lengthy discussions on cooking it. You need 1/2 pound raw beef per person for adult plated portions, it shrinks horribly. You want about 22 pounds cabbage, 16 pounds carrots and 25 pounds potatoes per 100, and some parsley. |
