Hello, I am planning a lunch and there will be 20 people. Serving size is in quotations. The items are: (1)Gyro,(4)Whole Chicken Wings,(1)Hamburger, (1)hot dog, (1)Smoked Sausage, (5)Chicken Tenders, (10)Catfish Nuggets, (10)Hot Wings. French fries, baked beans, potato salad & coleslaw. Can you tell me how many pound of each I need to buy? I want everyone to have at least one serving of each. |

Lisa, this is way too much food for 1 person, not enough for 20. Is this a buffet where you want people to have choices? |

Yes it would be a lot under normal circumstances but this is a business lunch to test food. Basically the attendees will be testing/scoring each full size portion dish. Each dish is not in sample size because it needs to be scored on appearance, qty, Etc. I have figured out everything except for catfish nuggets & gyro. Please help. |

OK. One better option is to plate a single plate for appearance and then put the buffet pan above it so that people can take as much as they want. Catfish, 6 ounces raw per person. Gyro, 3 ounces meat, 1/2 pita, plus all the trimmings- you need a tzatziki sauce (3 tablespoons), lettuce. 1 ounce, chopped tomatoes 2 tablespoons, maybe thinly sliced cukes 6 slices. |
