I'm planning a graduation party for 230 guests. I would like to serve grilled lemon pepper chicken breast but unsure of amt to purchase and how do I keep the chicken moist for a 4 hour party (open house). I will also be serving 2 other entrees. |

I definitely would NOT do grilled for a 4 hour hold. You need sauce/gravy. Look at the Orange Dijon wedding chicken and the chicken marsala on this site and go in this direction. With 2 other entrees, 1 pound raw per 3 persons is sufficient. If this saves you time, trouble, or money, please consider a donation to support the site. |
