How much spinach to feed 70?

02/15/13 		I am supposed to make spinach and strawberry salad for a church banquet to feed 70 people. I'm not sure how much spinach to buy. We will serve the salad before the meal, so people will not be helping themselves, but I want to have enough. Thanks for your help.

02/15/13 		Here is an authentic version:

Tiffany Salad :)

INGREDIENTS
2 big bunches of spinach, rinsed and torn into bite-size pieces or use baby spinach
3 cups strawberries - halved- or quartered if large
1/2 cup vegetable oil - OR half and half of veg. oil and EVOO
1/8 cup white wine vinegar
1/8 cup raspberry vinegar
1/3 cup white sugar OR use 2-3 tablespoons raspberry jam and cut sugar to 1/4 cup
1/4 teaspoon fresh black pepper
1 tablespoon poppy seeds

I use 8 pounds spinach for 100 servings, so aboout 6 pounds would be right for 70.
