How much precooked shrimp, beef brisket and roasted pork tenderloin should i purchase to feed 200 people.

Assuming this is all at the same meal?

Shrimp- if appetizer, 1 pound per 5-6

If the three are all as entrees,
2 pounds raw brisket per 5
PLUS 1 pound raw pork tenderloin per 5
PLUS 4 largish shrimp per person (the weight depends on the size per pound)
