I'm planning on making my daughter's picnic-style wedding reception to be held outdoors and served at a picnic shelter. The plan is bbq pulled pork made ahead (two or three days ahead )in 5-6lb. batches,cooled,refrigerated and transported via coolers the morning of the reception, and re-heated in 18 qt roasters. Does this sound safe, and at what temp should they be held during service? |

Safe as long as the batches are cooled quickly, kept below 40 degrees until reheated (transport in ice chests); reheated in preheated (20 minutes) roasters at 350 and turned down to 180 as soon as the temp in the middle is 165. |
