Planning an outdoor wedding for 100. Serving Ham and chicken breasts in nesco roasters along with freezer mashed potatoes 2 vegies and strawberry salad. I would like to make the chicken breasts ahead and freeze and have a sauce/gravy that would go well with the mashed potatoes....also that i can freeze ahead then reheat the chicken breasts/sauce in the nesco roasters. any ideas for a sauce that would go well with the potatoes? |

Either the orange Dijon wedding chicken or the chicken Marsala on this site would be great for that; the marsala might be better, but you can make a family size taster of both and decide for yourself. 1 Pound chicken breast per 3 plus 1 pound ham per 5. |

if i go with the marsala because that sauce would be better with mashed potatoes...i'll be using just white wine because i don't like marsala... my next question is...how to reheat in the nescos...would i do it the same as the orange dijon (you don't show instructions for the chicken marsala in nescos) Thanks for all the help from Ellen's Kitchen !!! |

Suggest you try at least 1 bottle of marsala, it really adds to the depth of flavor. Yes, you reheat same as the Dijon chicken. Do make sure it is thawed in the fridge. If this saves you time trouble or money, please consider a donation to support the site. |
