Does anyone know how to prevent sausage gravy from breaking on a steam table and when it does break is there a way to bring it back? |

It breaks because there is such a high ratio of fat/grease to flour, and once broken, no luck with repair. You can reduce the grease and use more flour and milk, and it will hold better, but not quite classical... See this recipe and discussion: www.ellenskitchen.com/forum/messages/21436.html |

I should have also mentioned,, if covered completely, steam can drip into the pan. You can try whisking it back together... |
