If this is a self serve buffet, allowing seconds, and assuming mixed adults, 3 or 4 serving lines, or 2 double sided: Use the Alfredo style sauce that holds on this site, or similar- true Alfredo doesn't hold about 75 pounds chicken breast At least 32 and up to 40 pounds pasta. I know this is a wide range, but it depends on 2 things; the other dishes served, and the appetites of the eaters. For example, if it is just spaghetti, salad, and bread, I would use the larger amount, but if there are vegetables, dessert etc, probably the smaller.
