OK. Do you have any idea how many vegetarian meals you need? Would you consider a beef stew, or pork instead of beef (better buy)? Would you consider 1 vegetarian and one chicken entree? You want to end up with about a pound and a half of food per person, counting everything. Do you have a top budget per person? Write again. |

beef etouffee- a thickened beef stew with wine- round or chuck- 1 pound raw boneless per 3 Bone in chicken- 1 piece per person Pasta vegetarian dish-what about a vegetable dish that could be a vegetarian entree- (some kind of casserole? ratatouille, green bean, eggplant Parm, etc)and let them do the rice and potatoes as the starches. Allow 1/2 cup veg casserole per person. Vegetable's Rice- 8 pounds per 100 Roasted potatoes-35 pounds per 100
