looking over the chart for salads for 100...a little confused...preparing mandarin orange salad for 200 using 1# boxes spring mix lettuce from Costco. Chart lists 8# leaf lettuce or 15 romaine heads....how many 1# boxes compare to chart quantities..8? Only add ins are orange segments and nut crunchy topping...There will also be broccoli salad along side a starch and green beans. |

With the broccoli salad, 8-10 pounds are fine. |
