This is for our Social Committee's Saturday breakfast. I saw your recipe for electric roaster scrambled eggs. That would be perfect for what we are doing. I do have a concern. We will start serving at 8am and will continue until 10am. Will the scrambled eggs in the roaster keep over that period of time? What temp should we turn it down to? Any tips? |

In your situation, I would suggest one of the egg casseroles rather than straight scrambled eggs- they hold better. Otherwise, consider doingthe eggs in batches, finishing every 20 minutes or so. Hold at 165. |
