I am working on a turkey banquet page right now. All the items are actually covered in the serves 100 pages in big pots, but theis is an annual question, so I am finally wortking up a post. You want to start with 1 pound raw whole turkey per person. You want a total of one gallon of sides for each 10 people (that is a bit over 1 1/2 cups per person), not counting brad and butter, dessert, cranberry, relish tray, etc. A #10 can has 12 cups or 3/4 gallon. Please read the article on self-catering your wedding or food event while I finish the article, and check back around October 15.
Here is my favorite easy green bean casserole:
2 #10 cans well drained green beans, French preferred, or short cuts
Mix the vegetables and soup Stays tasty until its gone which will be soon. |
