I am having a cold fork buffet for 60 people. Advice tells me to cater for 45. The list is below, can you help with the quantities I have not added. Remembering we are in Scotland and do not eat as big as the US, thanks.

Hi sorry Eton mess is strawberries, rasperries, smashed up meringues, whipped cream all folded in and topped with a nice coulet.
margarets desserts, one of my colleagues is making The cheese cakes is more desserts, but probably just onea choux bun cheese cake serving 16. I could drop the pork, and count 60 beef instead of 90 slices Aim to eat 8.45 pm |

Thanks. This is what I would do for a non- usa crowd. I would indeed drop the pork and do the lower count beef.

Crisps (potato chips) Salted peanuts-3 pounds Pakora/bajis/samosas being delivered hot by local indian- 2 per Pizza 18 inch mixed pizza being delivered hot- here we cut into little 2 inch squares when being used as, basically, an appetizer French bread. 6 pounds butter 2 pounds
Eton mess- 1 cup per 3 Fresh fruit salad- consider fruit tray instead, keeps better, looks better, people will eat less and what is leftover is more usable- do for 50- see the fruit tray page. If this saves you time, trouble, or money, consider a donation, maybe 10 p. per person, to support the site. With all these choices, you will probably still have some leftovers. |
