Hi Ellen, Thank you for this site. I am having a graduation party for 130 people. A buffet Style starting at 5:00.

My Pan Size is
Top dimensions: 12 7/8"W x 20 3/4"L x 3 9/16"D
Bottom dimensions: 9 7/8" x 17 5/8"
I will be making 2 pans of each dish

Fried Chicken 140 pieces 1 piece per person
Ribs 50 lbs
Fish 30 lbs
Meatballs 35lbs
Spanish Rice & Black beans 10lbs
Stuffing 8lbs
String Beans 20lbs
Baked Ziti 10lbs dry pasta
Macaroni & Cheese 10lbs dry pasta
Collard Greens- 20lbs
Penne ala Vodka- 10lbs dry pasta
Rolls – 12 dozen
Pasta Salad- 8lbs Appetizer
Tossed Salad – 6lbs Appetizer
36 oz Ranch
36 oz Italian
36 oz French
Chips & Salsa – Appetizer – 125 oz and 100 oz salsa
Sheet Cake
144 canned sodas and 128 16 ounce water as wells as alcoholic beverages. Can you please check my quantities? I am not sure if I should cut down on some items or make more of others.

Meats look good, maybe some left, could probably cut 10% unless they are football players.

Cut all the cooked pastas to about 7 pounds, pasta salad to 5-or at most 6. Increase rolls to 1.5 each, 4 pounds butter.

Tossed salad, use 1 1/4 times the amounts on plan for 100 for both salad and dressings.
Chips, for this age I do 1 pound per 12 and 1 cup (8 ounces) salsa per 5,

One sheet cake only serves 50 to at very most 60.

Check the soda count against the beverage page, or add 8 gallons of lemonade or iced tea.
