3PM Wedding Reception for 250

For 250 people for a 3PM Wedding Reception, I would like your expert advice on quantities for the following items:
*Mini cupcakes
(Guests will have the following for sandwiches or cracker bites)
*Croissants, sliced
*Deli turkey (need to know in lbs, please)
*Deli ham (need to know in lbs, please)
*Mayo
*Mustard
*Pimento cheese (need to know in lbs, please)
*Chicken salad (need to know in lbs, please)
*Assorted crackers
*Cheese tray
Also:
*Petite quiches
*Sausage balls
*Fruit tray (strawberries, cantaloupe, grapes)
*Veggie tray (cherry tomatoes, celery, baby carrots, broccoli)
*Mints
*Mixed nuts
*Tea
*Lemonade

*Petite quiches- 2 per person, at least 1/4 no meat
*Sausage balls- depends on size, 2-3 per person

*Deli turkey (need to know in lbs, please)
*Deli ham (need to know in lbs, please)
1 pound per 6 deli thin slices, 2/3 turkey, 1/3 ham
*Cheese tray- 1 pound per 12
*Pimento cheese (need to know in lbs, please) 8 pounds per 100
*Chicken salad (need to know in lbs, please) 1 pound per 12- you could skip this.

*Mayo
*Mustard
use table on the sandwich page Get pickles also

*Assorted crackers, 6-8 pounds per 100
*Croissants, sliced- get mini, 1.5 per person; also consider cocktail loaves and other small rolls; about 8 pounds per 100

*Fruit tray (strawberries, cantaloupe, grapes), use fruit tray guide, for 200
*Veggie tray (cherry tomatoes, celery, baby carrots, broccoli) suggest you do veggie tray for 100 and 2 classic relish trays (top of the veggie page)

*Mints- 6 pounds per 100
*Mixed nuts- 6 pounds per 100

Cupcakes, if 1 flavor, 1 per person plus 10%. If 2 flavors, 150 of each

*Tea- see beverage planning page, about 16 gallons, at least 1/4 unsweetened.
*Lemonade- 12-16 gallons
Add dinner level coffee from the beverage page
