Aloha Ellen,
I am cooking for my daughters wedding (150) guests, and I have no idea on how much food to prepare, I appreciate any input, thank you.
Appetizers:
*caprese skewers (cherrie tomatoes, fresh muzzarela & basil w a drizzle of balsamic vinegar (how many, being one of each in a skewer?)
*3oz shots of gazpacho
*1oz shot with humus and a baby carrot and cucumber slice
do I need anything else as aptizer?
Salad
Caesar salad with homemade dressing (how many hearts and dressing?)
Entre

*sauteed veggies (posssible aspargus, how many bunches?)
*penne al pesto ( how much pasta and sauce?)
*shredded chicken and mushroom in a wine cream sauce ( almost like a stragonoff, but served over white rice, how much chicken?)
*Rice (how many uncooked pounds?)
Dessert:
*Passion fruit mousse 1oz shots
*chocolate soft caramel balls
*coconut cake

*1oz shot with hummus and a baby carrot and cucumber slice- fine

you want to end up with 22 pounds per 100= 33-35 pounds. Asparagus, you lose 1/4 of the weight when you trim it.
Summer squashes, onions and tomato halves also grill/roast well
*penne al pesto ( how much pasta and sauce?) I would skip this with the chicken and rice
*shredded chicken and mushroom in a wine cream sauce ( almost like a stroganoff, but served over white rice, how much chicken?) see the chicken madeira recipe on this site for amounts- gravy instead of madeira sauce
*Rice (how many uncooked pounds?) 12-14 pounds

*Passion fruit mousse 1oz shots-2 ounces is 1/4 cup
*chocolate soft caramel balls depends on size, about 2 smallish per person
*coconut cake full sheet per 50
