I am looking for an old Bisquick recipe my mom used to make. I thought it was called Simple Simon. It had hamburger meat, mixed vegetables and some kind of gravy. It was topped with Bisquick Biscuits. Have you heard of anything close to this?

Look here for a spicy one from the 50's, Topsy Turvy pie, and just don't flip it-

This is basically a hamburger pot pie, and here is a tasty recipe, serves 4. You could skip the cheese.

1 pound lean ground beef
1 1/2 teaspoons onion powder
1 1/2 teaspoons salt
3/4 teaspoon pepper
1 bag (12 ounces) frozen mixed vegetables, thawed, drained
1 can (10 3/4 oz) condensed tomato soup
1 cup beef broth
1 cup Bisquick baking mix
1/2 cup milk
1 egg
1/2 cup shredded cheddar cheese

Preheat oven to 375°F.

Saute the beef, onion powder, salt and pepper, until it is browned and cooked through, heat 5 to 7 minutes.

Stir vegetables, tomato soup and beef broth into beef and heat until it is bubbling. Spoon the mixture into an ungreased 2-quart casserole dish.

In small bowl, stir Bisquick mix, milk, and egg together with a wire whisk or fork until it is blended. Pour over hot beef mixture.

Bake uncovered 25 to 30 minutes or until crust is golden brown. Top with cheese. Bake 3 to 5 minutes longer or until cheese is melted.

Darlene, my Mom mad this dish! I’m actually making it tonight. I was just looking to see if the recipe was online before I got the cookbook out and found this post.
Here’s the recipe as written, I’ll add our changes at the end.
From the Bisquick Cookbook, 1964
Simple Simon Beef with Muffin Squares
2 tbsp chopped onion
2 tbsp fat
1 lb ground beef
1 1/4 tsp salt
Dash of pepper
2 tbsp chopped green pepper
2 cups mixed cooked vegetables
Liquid from vegetables plus water to make 1 1/2 cups
2 bouillon cubes
2 tbsp Bisquick
1/4 c water
Muffin batter
2 cups Bisquick
1/8 tsp poultry seasoning
3/4 cup milk
1 egg
Sauté onion in fat over medium heat; add meat and brown. Add seasonings, vegetables, liquid and bouillon cubes; simmer 15 min. Mix Bisquick and water; slowly blend into hot mixture, stirring constantly. Cook until thick. Serve over hot split Muffin Squares. 6 to 8 servings.
Muffin Squares
Heat oven to 400°
Mix together muffin batter ingredients. Beat vigorously with spoon 1/2 min. Spread batter in greased 8x8x2 sq. pan. Bake about 20 min. To serve, cut into squares.

***We use one small onion and one small green pepper instead of 2 tbsp each. We omit the fat and brown the onion and beef together. 1/4 tsp black pepper instead of a dash. We use one large can and one small can Veg-All Original Mixed Vegetables, (drain the liquid into a measuring cup to measure to 1 1/2 cups)…Or, a 20 oz package of frozen mixed vegetables and 1 1/2 cups water. We use 3 beef bouillon cubes.***
