Ellen,
We are having a grad party for about 100 (including teens)from 1 to 4 in the afternoon. I know the amounts for a Nacho Bar and plan on having ground beef(20 lbs.) along with 15 lbs. of shredded chicken. Also serving:
15 lbs. of mini-meatballs in brown gravy,
turkey deli-meat (?lbs.) on cocktail buns, veg.trays: 4lbs. carrots, 4 pts cherry tomatoes, celery 9 heads, 4 lbs cauliflower, 3 lbs broccoli, 2 qts Ranch dip
marinated vegetable salad (? quantity),
assorted chips,
full sheet cake,
fruit salsa (? quantity)with sweet tortilla chips made from flour tortillas.
Assorted drinks of lemonade, tea, soft drinks, and water. Please advise on what I have listed and if I need to make changes. Thank you so much!

turkey deli-meat (?lbs.) on cocktail buns, you do not need this- I would skip it! or else the chicken or the meatballs

veg.trays: 4 lbs. (6) carrots, 4 pts cherry tomatoes, celery 9 heads (8?), 4 lbs cauliflower, 3 lbs broccoli, 2 qts Ranch dip

marinated vegetable salad (? quantity), I would sub a fresh fruit tray

assorted chips, 1 pound per 12; 1 cup dip per 5

full sheet cake, only 50-60 servings

fruit salsa (? quantity)with sweet tortilla chips made from flour tortillas. 1 cup per 4, 1 6 inch or 1/2 8 inch tortilla per person

lemonade, 6 gallons
tea, 6 gallons
soft drinks, see beverage page for assortment, do for estimated number of soda drinkers, you will have some left

water, 2 bottles per person

Thank you for your prompt reply. Do you have a recipe for brown gravy that would be good on the meatballs?

Get real consomme or beef broth, water just doesn't make it. Cornstarch will crack and separate if reheated.
